My favorite recipe is something that someone else cooks. I don't do much cooking any longer. Dave and I eat out a lot as a result of our travel and schedule. I probably like Italian food the best. I love really good salads and soups but I also like a variety of things. I spent many years cooking when my children were young, but none of it was anything gourmet that you would want a recipe for. My daughter Laura makes great lasagna, so I will include her recipe for that.
Laura’s Lasagna Recipe
Sauce:
2 lb ground beef – 90% lean
1 jar Ragu Traditional Sauce
1 jar Ragu Chunky Garlic & Onion Sauce
Brown beef, drain and then add sauce.
Filling:
1 16 oz container light ricotta cheese
1 16 oz container fat free ricotta cheese
1 cup Parmesan cheese, grated
4 eggs
1 T salt
1/2 t pepper
2 T dried parsley
Blend ingredients to a smooth consistency.
2 – 8 oz pkgs. shredded mozzarella cheese
(4 cups total)
1 lb Box Lasagna Noodles:
Boil for 7 minutes, and then put in cold
water until needed.
Directions:
Preheat oven to 375 degrees F.
1. Use one 9x13 inch pan; a deeper pan is better to fit all the layers.
2. Spread a thin layer of sauce on bottom of pan.
3. Add a layer of lasagna noodles, then a layer of ricotta filling, then a layer of mozzarella cheese and finally another layer of sauce.
4. Repeat layers, ending with a layer of lasagna noodles and sauce.
5. Sprinkle a layer of grated Parmesan cheese on top.
6. Cover with foil and bake 30-45 minutes. Remove the foil near the end to cook the top layer slightly more. The sauce should be bubbling slightly on the sides when finished. Let stand for 10 minutes before serving.
I usually get 2-3 complete layers, so use the sauce, filling and cheese accordingly.
I use lots of sauce, filling and cheese in each layer to make it gooey.
